Opened one of these tonight with some prime filets -- such a phenomenal wine -- that never disappoints -- drinks just as well young or aged 10 years.

Took the family out to a local steakhouse tonight. Wife and I both enjoyed this, though it's still a few years away from hitting its prime drinking window IMO.........

The wood for the barrels come from particular forests in France. ie, Argonne, Vosges, Nevers, Tronçais, Allier, etc. The wood used in my barrel came from the Limousin forest. It was fired to a medium toast and is Known for less tannic woods, almost neutral in oak flavors. I didnt want to over oak the fruitiness of the Merlot but still soften the tannins of the Tannat varietal. You asked about the color. The 4 varietals I used in this blend are very dark to begin with. Not much color is lost until polish filtering just before bottling and even then very little color is lost. Here is a barrel sample taken just before its final racking. Cognac barrels use different woods too depending on the desired flavors as well.

It was pretty dang good. Wished I'd had the time to double decant beforehand to give it more air time. Won't touch any more of my '08s for another 5 years.

Pulled a couple of gems for dinner with friends this evening ---
Going to start with the Montrachet -- this wine has a great nose with quite a bit of fruit with a great mid- palate. And a slightly dry finish. A very well balanced wine. Although...I honestly have yet to be disappointed by any Chassagne-Montrachet!! The 12 Spottswoode cab is a gem - in and of itself. Parker rated it 99 points for a reason. If a California cab would exhibit Bordeaux-esq characteristics -- this one is a fine example. It has a Pauillac style notes on the nose and some subtle oak. Very rich and full bodied with good acidity. Definitely could be cellared for 20 years -- but will be interesting to see how it's coming along. Cheers all!!! Sent from my iPhone using Tapatalk |

Whilst all those lucky devils are living it up in Vegas, I got to enjoy the most magical day with my little boy yesterday meeting Thomas the tank.
