It definitely is!! It was quite good. A lot of 07s are drinking really fantastic right now.

This one was bold yet smooth - after it opened up it was full of leather and tobacco notes. On the palate it was all cab up front but transitioned nicely through the mid palate to a silky finish!!!

Could someone provide a little guidance with this bottle please?


Picked it up in Bordeaux last week and just wanted to know that if opened within the next year does it need decanting first and for how long?

Or....

Should it be kept to age? If yes to this how many years do you recommend?

It depends on the Chateau. Saint Emilion makes great wines, but there is a big difference between producers.

G is right, this is a Union de Prodecteurs bottling I think and usually retails around $36 dollars or so depending on ratings. as far as aging it certainly could sit on it's side of a few years but it is not meant for long-term aging like a first or second growth, and would probably be best if consumed within a few years. My personal opinion is that ALL wines benefit from some O2 so feel free to give it a splash in a decanter.

I honestly don't have any experience with Bond other than the Matriarch. Have always been a Harlan Estate and Maiden guy, though I've stopped buying recent vintages. That '07 must've been scrumptious!

It is indeed! It's HER day today as I told her when we woke up this morning! We're about to head to the marina and we're going to spend the day on the water sailing.

The 07 was definitely amazing -- probably my most favorite vintage within the last 15 years or so....

I am a big Harlan and Maiden fan myself -- and I would say that stylistically these wines are quite similar - yet complimentary - as Bob Levy is the head winemaker of Bond as well. This 07 was seamless -- it was very complex yet super balanced overall - had hints of both red fruit and dark fruit -- on the nose with just a hint of pencil lead...and had a super smooth almost creamy-like finish.

(Bond also happens to be one of my favorite labels! Lol)

If your going to want to drink it within 2 years double spash it, use 2 decanters instead of decanting and pouring it back into the bottle. That's going to need a fair amount of oxygen.

Here's exactly what I would do if I only had one decater. I'd do a very heavy splash in the decanter, don't be worried just dump it in like your dumping it in a bucket, the more air introduced the better. Dump away. Wait 3 or so hours and if you have a clean glass water pitcher do it again into that. Heavy dump..

I would also taste prior to first dump, after a few hours prior to your second splash taste again, into water pitcher taste again after an hour. You'll notice a softening of the wine as you mix more oxygen into it. It's better if you have 2 decanters but like I said a glass water pitcher is good. Just do a taste every hour and 5 hour total I bet would be enough. Don't pour it back into the bottle to serve, pour from first decanter. Double decant usually means from bottle to decanter back to bottle. Forget that.. usually it'll turn into a mess being spilled while pouring back into bottle. The main thing is to taste every hour and get the oxygen throughly mix into one vessel to the other and enjoy the change. You won't have sediment which is another reason to decant. But you'll notice a softer wine after all that. Hopefully. Good luck and be prepared for mouth-drying tannic then juicy plum and black cherry. Get that oxygen in it.

Where's Roger, he knows more about Bordeaux then anyone on here IMO he could guide you through this.. but, it's a 35.00 dollar wine and I've never had that particular wine so it'll be fun to try this as you'll be kinda experimenting and you won't have wasted a ton of money if you don't end up enjoying it.

There are better bottles Roger, but for the money, give me HSS everytime. One of the best cost/quality ratios in the valley, really really big fan of HSS! you guys are running with the bulls today!!
