After a little encouragement from this thread, I made a random Thursday a special night and cracked the bottle of Sea Smoke I picked up a year ago. Really nice, took about 2 hours to open up. Still have the other half of the bottle for tomorrow, excited to see how it develops.

Oh Boy Was This Elegant !

Absolutely amazing, if it wasn't the wine of the year it should be !



Oh wait it was they (?) say !!?! I could careless about who says what, but they are usually correct and this was special

2005's wine of the year..



Wow just a full smooth start and finish this was ! Very excited I purchased these now.



As a drinker of wine I can't hold on to them and I replunish, share and gift wine so I buy ready to drink or spectacular years that are ready now, 2012-2013-2014 as an example. Ready to go as are 2007 even this 2002. I think the 1997 for the part are past prime but some are going to be well off to last a few more years

EDIT: I take that 9.8 back.. it gets better 9.9 as it's decanted

Simply...The Wine Thread

Menu tonight was organic, grass fed ribeyes. Prepared reverse sear style via a 2 hour smoke in my Traeger wood pellet smoker, then a 45 second sear on each side in a piping hot cast iron skillet. Turned out great, and paired marvelously with an '07 Grgich Hills Estate cab.

removed this morning from my storage and put into the refrigerator, will be ready for the fig jam, sliced apples, almonds and smoked Gouda and baguette grilled cheese sandwiches around 6ish... Happy Friday all and Bon Appétit!!

No doubt!!

The few 09 white burgundies I've opened within the last few months have drank superbly -- although the acidity seemed abnormally low (in my opinion) which I thought might effect the long term aging...but it was quite good nonetheless.

Let me know how you find that one.

I'm a burg fanatic, and lately I've been drinking all the 14's I can, they are just so sharp and as you mention the acidity is so well balanced in the 14's it's impossible for me to put them away, I'm drinking all my 14 now, that's how well they are drinking even being this young.

Amazing, actually. We ordered the wine without regard to what we might have for appetizers. We were at a steakhouse (Country Club at the Wynn). When I saw the oysters, I knew I had to order them.

I like a copious amount of cocktail sauce and horseradish on my oysters, so the spice from that complemented the wine. Otherwise, probably wouldn't have been very good.

I haven't had any yet, but I think it'll happen in a few weeks because the restaurant in another state says no wine to be brought in and although they have a decent wine selection it's all 2012-2014 nothing else

The 2014 was delicious. Far Niente is one of my favorites. This would be perfect in another couple years.

Country Club was amazing. We were in LV from Thurs to Sun last week. We hit Prime, CC, and Michael Mina...with a helicopter trip to land in Grand Canyon for lunch thrown in there. Mina had screaming eagle...too bad it was $8000 for a .750 of newer vintage. I asked the sommelier if he'd consider a by the glass offering; he said sure, for $8000.

A young first flight of Screaming Eagle for $8K? That is 4 times what it costs. A 750 bottle of 2010-2014 Cab can be had for around $2200 and even and 04-09 can be had for right around $2600. $8K is what you would expect to pay for a magnum. Thats a crazy mark-up!!

3-4 times markup ?? Why?? I'll do that for your food menu cause chef and guys work hard no problemo, but no thanks for your wine. I'll pay the 25 corkage. Are you suppose to tip 18% on the wine ??? Come on

I agree with you! We were just in Nashville and the places we went to were right around double the price. I thought that was reasonable considering most of the time it is 3 to 4 times.

Not cheap, Mark. Restaurant guideline on wine is net COST x 3. They have to make money, pay bills, power, staff, etc. Some go times 4, 5 or 6 and that is outrageous. But, if they have a corkage fee, why not? If I want to have a bottle of 'X' and they do not carry it; I appreciate the opportunity to try the wine with their food, gladly will pay for the service.

How, exactly, were you able to hold off for two hours? Did you leave? Chloroform yourself?

Ha! I'm good for 3 glasses of wine in an evening (weeknight), but only the first 2 should be good wine, my palate falls off a cliff after that. Plus, I like to see how a wine changes from day 1 to day 2. Add in a wife that doesn't drink red wine and you have 2 days of Sea Smoke.

I see you asked about two hours not a second day. Truthfully, the first sip I took after decanting was not all that great, but had potential for improvement. Between putting the baby to bed and making dinner, the 2 hours flew by and gave the wine the time it needed to open up.
