Got a Box of Mini Champagne from Costco the other day. Perfect for the Wife when she wants a mimosa or single glass of bubbly. They only seem to have them over the holidays. Works out to $10 a bottle.

I am continually surprised by how much better almost any wine drinks with an hour or two to breathe.
This should not be a revelation to me at the end of a 45 year wine obsession during which I routinely decanted my wine, but I am constantly reminded. I usually open a bottle, sample it immediately, and then rest it for an hour or so, and the difference is marked. Did it yesterday with a 2014 Chardonnay, which initially tasted a bit acid and one dimensional. Two hours later it was a different wine. Again last night I opened a reasonably priced 2013 Shiraz and decanted it immediately. Two hours later it was so different. I stopped decanting wine for a couple of decades but I think I am going to go back to this practice as it pays dividends.

We didn’t. We had some neighbors over for a holiday get together and they randomly picked it from the cellar. We weren’t serving it with dinner, which was a good thing as it’s somewhere between a great Zin and a port - sweet with lots of dark red fruit. We had some dark chocolate out as well as some cambozola cheese and crackers and it went well with both of those.
