Going to one watch. Staying with Rolex. What do you choose

In have decided to kill the collection. Consolidate all my funds. I’ll either have a great vacation at some point. Or a upgrade. I’m sticking with Rolex. I enjoy the simplicity of just having my watch and that’s it. I have no desire to go up a tier at this time in my life. What is the one you choose and why. Thanks for everyone’s input!

I think that watch would be the perfect blend of sport and dress such that it would be the perfect only watch.

This is a very opened ended question. We all have our choices, but how can we decide for you? Especially not knowing anything about you except that maybe 1) you're a Cardinals fan and 2) you work in big pharma

I'd choose a GMT Master II. I have both a 116710BLNR and 16710 (currently with a Pepsi bezel). If I could choose only one, it'd be the 16710 as I get 3 watches in one (even more if you consider the Jubilee). And I find the GMT complication very useful.

Date sub, no question. Built like a tank, has a timing bezel and date which is all you really need. It’s probably the most boring and obvious choice but it’s also the RIGHT choice.

I would have a hell of a time choosing between these 2 but I think the OP would win, but just barely

Impossible for anyone to answer for you. With only one watch, you need to find the one that reflects your personality, style, and lifestyle.

Personally I would have to ditch vintage and stick with a modern ready to bang up and swim with for a few decades. I would need it to be modest enough to not feel uncomfortable traveling or in certain social situations. Would need it to look good in a suit or T-shirt and shorts.

I think only one watch blurs all those lines; the submariner.

I'd go with a Daytona as the "ultimate" single Rolex and very comfortable.
If you want and need a rugged one, the SD4K 116600 is the one as it has older style size, matt dial and can do it all.
3rd option is the ceramic pepsi, for the vivid colors and functions.

Tough scenario.

Depends a little on your personality, dress style, and which functions you might like (i.e. do you need the date window? would you benefit from a GMT? how about a chronograph?)

My own order of preference would probably be:
* Explorer 1 (under-the-radar, perfect blend of sporty/dressy, can wear with jeans or suit, super comfortable, perfect size and proportions)
* Classic DJ41 (more classic; fluted/jubilee for dressy vibe, smooth/oyster for sporty vibe, appropriate with jeans or suit)
* Sub Date or Non-date (pure timeless, classic Rolex; pretty sporty, less under-radar, less appropriate in suits IMO)
* SS GMT: Either BLNR or Pepsi
* SS Daytona Ceramic

I really like the plain-jane oyster perpetuals too, but I'm not sure they'd satisfy as a one-and-only.

The great thing about Rolex is that pretty much any of their watches can be your only watch, just choose one based on your lifestyle. Me - I’m very casual so I go for a 124060, but if you’re more dressy then maybe a GMT or a Datejust... or whatever.

Which Rolex makes you salivate when you see photos of it? That’s the one for you.

By the way, I fully endorse your life simplification. Well done!

If you travel and don’t want to be noticed, I know this going to sound strange, I would go with a WG DD. I wear my DD a lot, and for the most part it goes unnoticed. Next for me would probably be Black GMT, because of the traveling. Not sure if any of this is helpful.

This does not really clarify anything, and is maybe more vague than your first paragraph

To answer your question though, for me personally the answer was a stainless steel DaytonaC (black dial)...but not knowing anything about you, I would say you can't go wrong with a SS Datejust - smooth with oyster bracelet if you want to play it extra safe.
