from what I understand it's gray gold, an alloy not plated

They may have been plated a long time ago, maybe those produced in the 1980s or earlier.

Plated until and into the early 2000s and homogeneous grey gold since. According to my Patek Service Center the transition was a gradual one. Based on the serial number they'll confirm if plated or not but typically you can tell from pics as well.
Just to add, if white gold looks like platinum it has been plated. For example, all 3940G and 5110G from the early 2000s that I have seen pics of looked plated, whereas the 3711/1G look grey gold through and through. |

5740G looks gray , clearly unplated 5078G looks like platinum, APPEARS plated. but I think it is not.... |
