Oyster Silver Dial vs Mother of Pearl Dial
Can anyone explain the difference to me? Besides price.

Oyster silver dial is a non precious dial. MOther of pearl is, well, real pearl.

IIRC - The silver dial is made with precious metal, crafted by metallurgists to give a flawless reflection and background for the dial's markers, numerals, etc.
Mother of Pearl is organic, created by oysters or abalones. Mother of pearl is created by the mollusk secreting calcium carbonate. This substance is white to gray and iridescent. It is the same substance created when an oyster forms a pearl, but only lines the inner sides of the shell.

I think my wife's silver concentric dial is actually silver. I could be misinformed.
