I only travel with one watch but I’m not usually going anywhere longer than a week so I just take one that works for that week.

I'm about to try this for the first time on a domestic flight. Local airport security always insist on watches being taken off and put in the scanning trays, which I'm not willing to risk with something so costly and easily pilfered. I'm going to put the watch in a combination-locking box in my hand luggage and then lock that as well. Neither level is a barrier to a determined thief with time to spend, but it stops someone craftily swiping the watch directly from a tray while I'm being held up for an extra pass through one of the scanners or whatever...
