Rolex GMT 16750 Steel / Gold: conversion to do??

Hello everyone,
I own this 16750 serial 625xxxx, bracelet 78360 VE with 558 endings, converted into gold steel.
Movement 3175
Do you think it would be worthwhile to convert it back to steel only?
If so, what could the expense be to make it consistent with your age?
In summary I should get:
1) steel crown
2) Steel ring nut + pepsi insert
3) Bracelet and terminals (I would keep the claps)
4) set of hands for 16750
5) buckshot dial without glasses?
i want to finf all parts if I could have the convenience

I thought 16750 was SS and 16753 was two tone.
