I'd take them in order on how ever many Rolex you want to consider a full collection. For example...if only one....I say a Submariner No-Date....If only two...the first two on list....and so on. I am using current production models...but previous versions certainly can be used in place.

Here is what I'd suggest:

1) Submariner No Date 124060 - Black Dial
2) Daytona 126500LN - White Dial
3) GMT 126710BLNR - Black Dial Blue/Black Bezel
4) Sky-Dweller 336934 - Blue Dial
5) Submariner 126610LV - Black Dial Green Bezel
6) Daytona 126500LN - Black Dial
7) GMT 126710BLRO - Black Dial Red/Blue Bezel
8) Sky-Dweller 336934 - White Dial

Two of each model in different color variations

So, based on your list: Root beer, Panda SS Daytona, Mint green DJ, as you configured it, but 36 mm, platinum DD, fluted on president light blue dial. Also, throw a black Explorer in the mix. That’s more than anyone needs.

Collect what you like and let everyone else collect what they like.

I agree with Grady.

I will play your game but by my own rules.

These are my seven in no particular order.

For me;

DD40, Sub TT Bluesy, Milgauss, Air King, TT Daytona (slate dial), YM40 (Rhodium dial), and I'm one short. It may end up being the Ti YM or a 1908 (or both or something totally different).
Actually traded my 7th for the Blancpain FF Bathyscaphe. I like it more than my silver dialed OP41. Still looking for the replacement of number 7 as mentioned above. 7 is a nice number with one for each day of the week.

Watches aren’t about what you need but about what you want.
But yeah, I really like less watches but have a PM in there.
