How many 1680 red subs were produced?

They range 2m serial to 4m serial so must be some subset of that I assume

Mark Lerner has the closest estimate. It may be viewed in his extended article.

Not many were sold. They were a hard sell after being introduced.

Not many were sold as jP says.

Talking to a few old dealers in UK from 67/68 period, they stated that the old buyers of 5512/13 couldn't see the point of a date on a dive watch and the 1680 therefore in their words was a 'waste of time', it was also a good deal more money than a 5513 and even a cosc 5512.

The sales of them in UK for first couple of years were very slow as a result. Btw it's also why when someone says the 1680 white is almost as rare as a red (because of the time it was in production in years) they are not correct, because by mid 70s the date sub was selling very well as perhaps we can say it was the 'first fashion professional dive Rolex'.

Btw, it's only when we come to think about it, we realise that Rolex strategically segregated the date submariner for all its weird and wonderful innovations eg Materials (gold), HR marker (nipples), dial (blue/black/green) bezel colours (Blue, black, Green) etc etc....and Rolex left the non-date entirely unsullied.

Superb historical info. This is why we're all here.
