We love being on the gulf coast for the fresh seafood. Tonight we cooked Cajun seasoned Triple Tail fillets and yellow rice with vegetables, and served it up with an Oregon Pinot Noir.

Thanks! We’ve been buying fresh fish and freezing it to take back to CO in the RV so we enjoy it at home too. We have grouper, snapper and triple tail so far. We have two more coastal towns to hit before we head inland through TX on the way back to CO.

Lamb chops with roasted “sides” - gnocchi, potatoes, scallions, shallots, spinach, and a variety of mushrooms with a Dijon mustard, horseradish and honey sauce. It was surprisingly delicious! The AZ Syrah paired very well with the dinner too.

Me too. We bought some flash frozen vacuum sealed crawfish while we were down south and some Abita beer too.
