I've never been a big fan of daytona.

I would vote for the white dial speedy on bracelet. One cann't complete any collection without a moon watch! I just handled this at a dutyfree airport and the white lacqured dial is hard to photograph and the dial pops so much more in real life as the black accents are all polished.

Going for the Day Date. The sort of dressier sporty watch would round it out nicely and give more variety IMO.

Obviously a Daytona. I came to the same decision for myself.

Either of your choices would do but would lean towards PM Daytona

Are you looking to add one to rotate equally with the others or as something more for special occasions?

Personally, I like having watches that I wear infrequently. Adds an extra sense of occasion when I do.

If part of a 3 watch balanced rotation I’d go Daytona. If something more special, I’d go neo-vintage DD, Reverso or Patek.
