Daytona Sweep Hand
Can the sweep hand on a Daytona be set that it acts as the second hand when the watch is not in chrono mode?

no, it'll only run when the chronograph is activated. This will shorten the power reserve, and possibly slow down your watch a little if you would have it running all the time.

Like any other chronos, the main sec hand will only run when the chronos are activated.

No, the chronograph function would need to be activated to let the chronograph hand act as the continously running seconds hand.
But WHY would you wanna do that?!?! Firstly, you already HAVE the continously running second hand at six o 'clock (if the movement is the NEW Daytona mvt. Cal. 4130, that is!). And in the NEW mvt. Cal. 4130 you can also STOP the second hand via the crown (socalled "hacking" feature) which you cannot do with the predecessor, the Cal. 4030 "Zenith" mvt. where you had to hold the crown forcing the second hand to stand still (without actually stopping it, though). Secondly, the PR (power reserve) would drop if you had the chronograph hand running continously. The power reserve for the in-house Daytona cal. 4130 is 72 hours (!!) when the chronograph is NOT running, and 66 hours when the chronograph is continously running. The predecessor, the "Zenith" ca. 4030 had a power reserve of 54 hours and 47 hours with the chronograph continously running. Btw: in comparison to the "Zenith" ca. 4030, the new in-house Daytona cal. 4130 movement winds up 68 % FASTER! Thirdly, the mvt is worn much quicker if you use the chronograph hand 24/7. However, it IS adviced to activate the chronograph hand at LEAST once a month and let it run for an hour or so to keep the oils in the chronograph mvt. fluid, but otherwise I would NOT advice you to have the chronograph hand running continously.

I always let my Daytona chronos run when I am wearing them - they are made to run just like all rolex movements. A slight drop in power reserve means jack - wind it or shake it. The difference in your job description would have more affect on your power reserve.
