My new GMT II TT changes more than 5 minutes after midnight. Should I be worried about this? Is there a way to "recalibrate" it without bringing it in for service so soon?

I sleep soundly in the knowledge that all my Rolex watches change the date exactly at midnight. I hope.

It's just the minute hand being a little off...

When the minute hand was placed, it is about 1/2 degree off. The next time you are at an RSC, they can fix it but it nothing serious...
