I had both a 16750 and a 16800 at the same time... Only the matte dial 16800 remains as my birth year watch.

You will not loose money on Sub no date which is on your budget. Try hard you can get new from TRF

They are both excellent. 81 was also a good Blue Tudor Snowflake year.
They are likely to gain more value than either of the Rolex's over time. Same case and technology as the 5513 ETA movement and currently around 4K here and likely double that plus in 10 years.

You probably can't go very wrong but also consider the 1680, yes i am very biased and I love mine but an end of line from 81 is possible:
