Paul,you have out done me for sure! Sadly,we are expecting a lot of rain Saturday,Sunday and Monday. My town is crazy busy this weekend,but plan to stay in my pool(without wearing a watch)whenever possible till Tuesday.

Just pulled some prime bone in NY Strip and Filet out to grill tomorrow! I'll pull out some good to great wine too!

At the luncheon the other day for Jannet's birthday at Leonora Restaurant at Fredriksborg Slot/ Castle in Hillerod....
A great day and great food. Herrings, shrimp, lox and fisk filets followed by frickedeller, pate and roast beef. ...along with wine, beer and of course snaps.....

Last night I cooked Lobster Thermidor (out of shell) with an apple, Parmesan and Walnut salad. Washed down with a lovely NZ Sav Blanc.

3 hours in at 180-200 degrees. Smoke ring is developing 👍🏻
Have some home made beans slow cooking in the kitchen. About an hour or so to go.

Nice ribs. I'm doing beef short ribs. Here they are after 2.5 hrs of smoke.

Then 90 mins in the foil.

And we're just chilling by the waterfall waiting on them to finish coming to temp.

Finished product. Not fancy but one of my favorite meals. Wife wanted Mac and cheese so made a 7 cheese sauce with multi grain pasta.

Tonight we toasted to the loss of one of the founding members of Napa Valley wineries, Mr. Donn Chappellet, with an 04 Chappellet Cabernet bearing his name, served with slow smoked beef short ribs. Rest in peace Donn and prayers to the Chappellet family.
