Forgot to take pictures this weekend. Made a nice chicken chili on Saturday with cornbread. We had prime Tops yesterday with baked potato and Corn on the cob. |

Thanks Paul. Not too spicy as the wife likes it too. I just add habanero flakes to my bowl..
Super easy recipe. Whole sweet onion, a ton of garlic, fire roasted tomatoes, some Adobo chilies in the can, serrano chilies. A little salt, pepper and chili powder to taste. A pound or two of fresh cubed chicken breast. I use pinto, black and kidney beans. Can of each. I start the chicken first, add the onion, then the peppers, then the garlic and other seasoning. Add the roasted tomatoes and a little water if needed and bring to simmer. Add beans and simmer a couple of hours. Super tasty and health meal with some jalepeno/cheddar corn bread. I do another version with all white beans and no tomatoes/adobo. |

The birds were cooked the day before because we headed up to the mtn house last night, but dinner turned out great. Mashed white sweet potatoes with roasted garlic, balsamic glazed roasted carrots and green beans, two types of smoked turkey (citrus/rosemary & dry rubbed), served with a Washington Syrah, and pumpkin parfait for dessert. The wine may sound like an unusual choice, but the smoked turkey and smokey gravy needed something more robust to go with it.
