Have not shared this with TRF...epítome of Xmas food!

First of all, it is official: I am in PIG mode! December, with all the holiday food...impossible to resist!!!!

Now, you all know tamales, right?

Now, think of lasagna....pictured it? Here is Mexico's twist: instead of layers of pasta and meat/tomato sauce, use tamales and poblano peppers with corn! Top it off with cheese, cream and green salsa....this, my virtual family, is called Pastel Azteca (Aztec Cake)

Gerardo, I love tamales. I must admit that I have not tried the tamale lasagna! That looks very yummy! Thanks for sharing and making me hungry!

Very easy! Ingredients:

Tamales
Corn
Poblano pepper (it is salty, unlike bell pepper, which is sweet...hmmm...bell might be interesting)
Cheese (manchego is popular in Mexico)
Cream

...just layers! Tamales. Pepper (slices, no seeds). Corn. Cheese (this will be the glue between layers to keep everything together). Repeat. On last layer, add some cram and, for spice, salsa verde (you can skip this if you do not want it spicy).

As tamales are cooked, you just put it in the oven to heat and let cheese melt (180-200f while you open wine and talk).

Think lasagna, but replacing pasta with tamales and sauce with corn, cheese and poblanos.

Living in Tucson, AZ for 10 years gave me a real taste for tamales at Christmas time. Green corn were the standard for the area. Now as far as Lasagna is concerned, my wife is of Italian decent and we get plenty of Italian food in our house but never Mexican style. It looks delicious!!!

I do have a story about an old friend who wouldn't touch tamales. When he first moved to Arizona he ordered tamales at a Mexican Restaurant. No one told him he had to remove the corn husk and he tried eating them as well as the maze and filling.

It is different spicyness. Flakes add the punch with dry heat; salsa is moist; IMHO, salsa is great for Aztec.
