So I've seen the incredibly expensive VC Overseas ultra thin and wondered if there has ever been a 39mm or greater Royal Oak without the date.

IMHO that would be a beautiful and symmetric watch.

I'm not talking ROO's just the normal RO's

Of course. The AP Skeleton Ref 15305 has no date. Actually, no dial as well
