The wife and I always have a taste right after opening, regardless of the wine.
We decanted this one for about 4 hours before the first full glass.

I find ‘13s still really ‘green’ and haven’t been opening many of the big cabs — but...found the same fate of the ‘14 PlumpJack reserve we opened over the weekend. I thought that one would be much more approachable — and it still hadn’t really begun to open up after 3.5 hours.

Then again...I am the guy that sometimes starts decanting wines today (in the morning) for dinner tomorrow!!

Probably the right call. Gevery-Chambertain is a favorite of mine - but definitely needs some age.

That ‘98 Hermitage (Paul Jaboulet) last weekend I opened was unreal - how dense and fruity it still was - and took a while to open up.

I had this at Easter. One of Australia's best cabs from a cracking vintage. I did commit infanticide but tried to give it a lot of air before serving. Tasting note below is spot on.

"Violet and subtle leafy perfume, pure black and red fruit, baking spices, aniseed and mocha. Medium bodied, the precision here, the generous delivery of flavour trimmed of excess, seems like the work of the truly gifted: how do you make it look so easy? Sculptured tannin, ribbons of clear acidity, and length that soars. Truly, a masterpiece of Australian Cabernet."

Cool!! So their 15 vintage was great as well, good to hear.

How did it open up? I’ve found 15 California’s to be quite approachable - even as young as they are now — even more than many 13s and 14s....really has me wondering about longevity...but we’ll see!

Opened up nicely but still had plenty to go. It was in the decanter for about 5 hrs.

When I go back to the US to see my in-laws I seem to bypass the big cab guys (focus is on OR pinot and a few CA producers like Littorai, Ridge, Arnot-Roberts and Broc Cellars) but seeing all your posts I will have to pick some of these up and bring them home next time.
