If it’s your only watch I would say yes but with the following conditions.

16710 with all 3 inserts so you can swap out. I used to be into colorful bezels, but if it’s the only watch sometimes you just want something plain and simple. Now if you already have a simple watch then go for any Pepsi model.

Would you wear a Rolex Pepsi GMT as a daily work watch ? (Office environment )

I do. Both 116719 WG BLRO and 16710 pepsi (have coke and black inserts, too). There are some occasional meetings that I won’t wear them to because the President of our company and most of his peers wear Ironman plastic watches. For those annual meetings, I have a Luminox I enjoy. I just try to wear my watches without overthinking it. Several folks at work know I am into Rolex and trade a lot... most don’t care.

I think fewer people than you realize even notice watches. Most people are just going to see a black face steel watch, and those that do notice the name on the dial and say something. Well I actually think that a good watch should accompany me to work.

I think you can get away with it. I work in an office and would be comfortable with this. I wouldn’t wear a nato to work but most bracelet watches should be fine.

Whether a certain watch is appropriate in a work environment comes up all the time here on TRF and the answer is always, it depends on your situation.

A large majority of TRF members live in the US, where the work environment is fairly casual and any watch goes. However since OP is from Australia and we don't know the type of work environment, it is difficult to comment.

What kind of watch does OP's co-workers, clients and supervisors wear? If you are in a conservative environment, even if you are not wearing a suit, people will notice how you dress and how you carry yourself. They will notice your attire, hairstyle and accessories (including your watch). If you are at all concerned about what others will think, it is better to stay with the black bezel during work hours. After work, it matters less, although some employers (and even some clients) monitor your social media posts to see what your life outside work is like.

I wear a watch everyday to work. Sometimes my 116710LN other times my Blue Pelagos. I work in an office in corporate America. At a desk in my cubicle and it is very relaxed and casual no formal dress code. Jeans and a tshirt is fine at my job. A few times people have noticed them. The Pelagos people notice more due to the blue standing out more.
I bought my watches myself and worked very hard to save money to be able to purchase them. I didn't buy them to have them sit in a safe or only when I get dressed up/special occasions.

I wear a WG BLRO in rotation. It's under the radar (I can hear some of the comments now...) and doesn't feel as "flashy" as the day-date...
