Tasty food tonight fellas. We just did poke takeout with some cheap wine on the back patio - long week.
I did throw a couple of pork shoulders on the smoker tonight for pulled pork sliders tomorrow - having the neighborhood over for a GTG to meet all the new neighbors who’ve moved in over the last few years.

That sounds tasty, Roger.
I didn't take pics, but I made a few prime New York Strips, old-school rice, corn and some diner-style gravy. Seared the steaks on cast iron, basted with butter. Nice shell, perfectly rare inside. Delish. Since gravy without a roast is challenging, I grabbed some beef stock, used the font to get some flavor and reduced the stock by half. Added some garlic pepper, to give it that 'truck stop' flavor, and then some sea salt and flour... perfected texture then dabbed some heavy cream to get color and richness. Yum. The corn, well, just warmed it, drained and added some butter, salt and ground pepper. The overall holistic meal came out wonderfully, not fancy, but old-school, quality steak, with a touch of country. My kid loves it!

From this angle the flowers used for garnish look a lot like spiders
The best thing on that dish was the roasted onion believe it or not. It’s always the simple things. Truth be told I only made it half way through the dish because the prosciutto beforehand with house made sour dough, chili honey and pecorino whipped butter was amazing. I’m Italian and my wife is Portuguese so we could eat cured ham cheese and bread until we are both 6 feet under.

Made a quickie tonight. Braised chicken with unsalted butter, crispy edges and just the right amount of salt. A French summer sauce, reduced chicken stock with bits of the braised font, heavy cream for that golden color and of course some special Laszlo seasoning... The mash, oh my... I shocked the russets first and rolled them in a gentle boil until perfection, just a dab of salted butter followed by some half-and-half to smooth them out. End result simplified but the flavors spoke for themselves.
