Working on the pomegranate brisket with cranberry succotash. Salt & pepper both sides.

Sear both sides in grape seed oil over Medium High heat about 5 minutes per side.

Remove from pan and rest while you sauté onions and garlic.

Then deglaze the pan with chicken stock, add the brisket back in on top of the veggies, add 1/2 C red wine, 1.5C pomegranate juice, thyme and rosemary, and top off with more stock until the brisket is 3/4 covered. Then into a 275F oven covered for 3-4 hours until fork tender.

Will pull it later and reduce / strain the liquids by 1/2 for the sauce.

The succotash is corn and dried cranberries tossed with honey, EVOO, and red wine vinegar.

Will also be doing grilled oysters Rockefeller for an appetizer.

Shucked, cleaned, and topped (butter, shallots, garlic, bacon, Parmesan, and panko) - forgot the rest of the toppings in Denver.

Standing watch over them while they cook. Who needs a coat?

Prep work done

. Pretty simple center cut pork loin, roasted veggies, salad and good bread. Oh and wife did Cinnabon’s.
Will put the pork in the smoker for added flavor.

Our traditional Danish Christmas Eve dinner, compliments to my Mrs..
Starting with risengrød... and Yule Ole (Christmas beer).. replaced by wine later. When ready, an almond is dropped in the pot and stirred in..and whoever gets the almond in their portion, wins the 'Mandelgave'.. This year it was me..and won the bottle of Lemoncello.
Then The Duck, always wonderful, with sugar glazed potatoes, Rødkål (red cabbage and an excellent gravy .. A feast to behold...!
(Poor pic quality from resizing.. but you get the idea...).
It was Very good..........!!
