Rolex over Tudor but...
GMT over Sub

Why did you go for a GMT from Tudor but a Sub from Rolex? Why not GMT from both?

I don't see many Rolex's in the wild, but I see fewer Tudors.

Basically, I had my eye on the sub for a long time but I was on the waitlist and didn’t know when I would get the call, so I wanted to try my luck on the Tudor gmt because I thought it would be a neat piece and one I could actually get. But then I got the call for the sub, thankfully, and will just get the Tudor on another day. I’d love to get the Rolex gmt as well but that’s near impossible for me to get over here plus too the sub looks more appealing to me; nice and simple and it’s the watch that is the face of a luxury watch. I’m hoping this gmt craze will die down like next year which will in turn make the Tudor more available

First rule of watch collecting, never settle. Settling on the watch you want leads to flipping the watch you bought for the watch you wanted in the first place. Get the Sub.

You originally had your mind set on the Sub. Get the Sub.
Wear it and enjoy it.
You might find you no longer want the Tudor but if you do, that'll be easy to add.

What watch do you want? Did you want a sub when you ordered the Tudor? Or, are you looking for a GMT?

There's a lot of unknowns here. In the absence of knowing what it is you really want, I would say get them both and then if keeping them isn't financially practical, then dumping the one you like the least.

One is a GMT and the other is a dive watch. Why not both?
There will be days when you know you're going to have the propensity to beat up your watch (climbing, working on a project, camping, etc). I think you'll like having a watch to wear for rough tasks so you don't beat up your Sub.
