I use a Cuisinart, which makes the finest shreds of the potatoes, and wring the heck out of the goop before frying. In my opinion the drying down plays a huge role. But my best friend is still hand grating, and they're wonderful too.

We haven't been home long enough to light candles for the first two nights. I assume my wife will break out the Hannukiah tonight to light candles for the third night. Tomorrow night we celebrate the fourth night with my mother, and my son and his family at his house.
