Jewels? What do they do?

I just want to ask what are "jewels"? I keep reading that the Omegas have 23 or 25 jewels and that certain Rolex timepieces have 31 jewels....

What are jewels and what do they do for the watch? Are these the ruby-red things I see when I look at the back of the "see-through" Omega Seamaster GMT watches?

Yes it's the small red ones. They're synthetic though, not "real" jewels.
They reduce friction in the movement, to avoid "metal on metal" in relevant places. Also function like bearings...

They are. Usually synthetic rubies which act as bearings at critical wear points.

You want jewels?

We got jewels!!!

How about this modest little piece? 43 jewels around one side of the rotor, 42 of 'em around the other side. Add those 83 to the 17 functional jewels in the ETA 1700 movement and you have the Waltham 100 jewel, which probably holds the distinction of having the most non-functional movement jewels of any watch ever made!
