This may be a stupid question...

I have seen when people when posting subs and GMTs saying they have the maxi dial. What is the difference between a Maxi and the other dial?

Bigger markers and fatter hands. You can see this on the Green Sub vs. the regular Submariner.

Only sub with the Maxi that is currently made is the LV, aka Kermit, aka Anniversary,

The black subs are all standard. There are some older, Maxi ones

I would love to get the lv with the maxi dial and put a black insert in it.now that would be sharp.
even better-lv with a ceramic black.
I dont want any comments about my taste in watches either..

Correct!

You could put an LV maxi dial (if you can find a spare one, mind you) on the normal SS Sub Date like Jocke did. Or get an LV and exchange the green bezel insert for a standard black one if you want a "standard" Sub look with a maxi dial.
