Chef should feel honored that it's picture worthy!

I ate at Le Bernardin in NYC and took pics as well.

Paste or steak

When I order my sushi, if it is a tuna-based roll, I hate it when they use the tuna paste instead of the steak cut. I don't know why they do this. I can only surmise that it is cheaper. Sometimes, this is crazy, I know, I will ask before dining if they use paste or steak cut. The paste is not as flavorful. It taste, to me, like some canned meat spread they used to make in the 70s. As long as it is steak cut, I'm good with any sushi

The "paste" you refer to is typically the scrapings off the bone and skin of tuna leftover when the steaks are being cut. It being cheaper is the primary reason it it used. I tend to see it being used more in "spicy tuna" tolls and the like.

While I used to eat more rolls, I have grown to appreciate sushi more in nigiri or sashimi style.

I think I have followed your path. Tuna was a great way to come in thirty-five years ago, but now I prefer sashimi style cuts and type. After you've mixed sushi, wasabi, and soy, in as many different ways possible, you pretty much run out of options. I don't go as often as I used to, but still enjoy it occasionally.

Mrs. Abdullah decided I would enjoy my vacation more if we were to babysit her brother's pre-school aged kids for the weekend. Sashimi seems to relax everyone... must be magic.
