I believe transitional refers to a short-lived model that spans the gap between two longer-lived models. Since the model run was short, there is an increased chance for the model to be collectible (rarity often translates to valuable).

Transitional refers to changes of watches. For instance the change from matte to glossy dials, from non WG trimmed indices to WG trimmed ones, change from the use of plexi crystal to sapphire ones, change of movements (non fast-beat to fast beat), etc.

When introduced these models featured upgraded 3xxx fast beat movements, quick-set dates, etc... that, at the time, were new to the references. However; Rolex chose to maintain the "look and feel" of the models they replaced via the use of matt/tritium dials sans WG surrounds. In the case of the 16750 the acryllic crystal was also kept. Beginning in the mid 80s as Rolex took the next step these models were equipped with the gloss/WG dials we see today.
