Help needed - One watch collection

First of all hi everyone I am new and this is my first post :)

After two years collecting and regrettably flipping watches I have come to the point now where I am selling off my collection and looking to go down to one Rolex. The notion of strapping the same watch on everyday for every occasion appeals, in essence I want a companion that will last me a lifetime and that halts my desire to add more and more pieces which invariably get sold somewhere down the track.
I am open to vintage or new but has to be on a bracelet, between 36-40mm, 100m + water resistance, not fussed on a date feature but a useful complication would be handy. My wrist size is 6.3" so the size of the new super cases worry my slightly, budget would be up to around 12000 GBP.
A watch that fits most attire that doesn't look odd from shorts and a t shirt to the very rare occasion I wear a suit.

Any advice gratefully received especially if anyone else has gone down this route.

I'd say a 16710 GMT Pepsi, 16610 (The one I'd keep out of my collection) or what about a 114060 Sub or 4 liner 14060m?

Out of interest what watches are you selling? Do you have any Rolex at present?

If you can get one retail the new TT RG GMT CHNR would be a nice watch for all occasions.

Failing that, any SS sports model - Submariner, GMT or Ceramic Daytona, but as above, only if you can find one retail given your budget.

For one watch, the 16710, hands down.

It doesn't matter what version 16710 because it has something the 16610 or other Rolex's don't have; changeability. A 16710 can be all versions of itself (LN, Coke, Pepsi) with simple, quick, DIY bezel-insert changes. As far as the dress up/down "look" there's nothing special about a Sub date the LN GMT doesn't already have covered, except the latter has far more looks up it's sleeve.

The 16710 is also at home on either brushed oyster or the slightly dressed-up Jubilee. Easy to swap between them, so it's 6 watches-in-1 (3 insert x 2 bracelet options) even without getting into non-Rolex NATOs, Zulus, or rubber straps.

The multiple time zone function/complication is something many people find useful.

Plus, the 16710 has a 120-click bezel which makes it easy to use as an everyday timer.

GMT-Master II, Ref# 116710LN

Both are classics.
For your wrist of 6.3" I won't recommend anything above 40, stay within 36-40.

I wouldn’t call one watch a collection. That being said, I’ve I had only one Rolex from my current lineup, it would be.... whew!!!! This is a hard choice!

OP, let me throw in another vote the the GMT 16710. I too prefer just one watch, and this watch is an absolute treat to wear for everything. It is so comfortable you will forget its on your wrist (I sleep in mine), and it is so versatile that it can be switched up to suit your tastes if they change.

I personally prefer the coke bezel on an oyster bracelet. Here is mine.

Which watch are you referring to?

36mm explorer would be ideal for your wrist size. SD 16600 or Daytona wear slightly smaller. All are versatile but you'd have to remove a permanent link on any 5 digit, but the last 2 Daytona generations provide the best fit without having to remove a permanent link.

Another vote for the 16710

This watch kills it on so many levels.. time zone (and jump hour hand!) functionality, 6-in-1 options, the Pan Am lineage. So sophisticated!

PS. you cannot go wrong with a 16610 or 14060. Both subs are so frickin classy and timeless it hurts.

But the 16710 man..
