30m vs 60m WR difference?

this question i suppose applies to any dress watch but what is the technical difference in a 30m wr vs 50 or 60m? does increasing the WR slightly make the case lines too bulky, or add unnecessary expense? i mean AP has watches with 20m, 50m, 100m.

more to the point is i wish more watches had slightly higher WR than splash resist so i could feel comfortable going to the pool with it and traveling without worrying about it. i know most on here don't feel comfortable with <100m doing those things but patek and AP say it's fine for surface swimming the 5712 and the jumbo provided they are pressure tested.
