Rolex already has a perfect "half way" metal between SS and gold/Pt: it's TT :)

In general silver jewellery is not that much valued. (You very seldom see expensive gem stones on a silver rings for instance.)
Gold and platinum is used for high status items and and stainless steel for less expensive "fashion" items. Rolex is a luxury item and as such does not fit in the more "cheap" category where silver is used. I think the market for a silver Rolex would be very slim.
